Another attempt. This time I ended up with too much wort?? Dip stick showd 6 gal before boiling.
Tasted pretty good. Sweet & malty. Hint of hop aroma.
Used the Brew Zilla. Worked very well. two things to fix. 1. Shorten up the mash time and watch the water level closely. 2. Set the boil temperature to 210 degrees. 204 F was too low and messed up the PID controller.
This was my first brew with the new Brewzilla system. I discovered how to make a profile for brewing this beer and it uploaded into the controller. I wasn't quite ready when I started it and some of the temperatures were wrong??? So, I had to manually intervene. Also difficult to tell how much water/wort is in the brewer. grain pipe hides numbers. Need to school up on profile management.
Improvised Decoction Method
Looks a little darker than sample.
Brewed by myself. Wort tasted sweet coffee/chocolate with a bitter finish. Probably did not have enough hot liquor to make 5 gallons. used the kitchen stove to heat water. Put fermenter in garage at 74F. It cooled to 50 some degrees overnight and did not ferment. Brought in house. Sunday Afternoon it started bubbling. Harrison asked me where the bubbles were!!Monday fermenting nicely now at 74F.
Added Oxygen before adding yeast. Fermented very nicely. Slight foaming out of gas lock. Continued slowly the third day.
Just me brewing
Used the spectrometer for the first time. Couldn't get it to zero out so subtracted .02 from each reading.Broke thermometer...again.
Used new fermentation stand. Wrapped towel, watered and used Fan to keep wort at 72-73 deg. f.
Brewed by myself. Started at 10am and finished around 4:30pm. outside water froze,
Nice day, sunny no wind in the low 60's then hail!! Brewing went smooth. 4.5 hours.

Added 2 oz. of dexmotrin
Added 4 grams of gypsum to raise ph, not sure it did anything. Fermenting nicely at 66 F. On 11/17 I observed that the vent was cloudy and some yeast on the bottom?? Also the upper shell of fermenter seems to have yeast foam on it. Also it was fermenting fairly actively. Not sure how this happened.
Actually pulled of an additional 2qts, but did not boil it. Not sure that was the right thing to do. Trying to increase sugar content. Nice orange color, great aroma, whirl pooled in fermenter and hops settled easily and we blew them out quickly. 163 degree was a bit cool to get mash to 150. Need to modify.
