We Mash in at 151 F, let it rest for 15 minutes before we start to vorlauf our mash with heat on our wort grant. After an hour of heat, our average mash temp is around 162 F and we transfer the wort to the boil kettle. We use first wort hops additions of a hop type called 07270 which sits around 17% AA. Added .8 ounces to boil, needs to be more bitter. I also adjusted the efficiency and grain to hit 1.068. Last but not least I changed the yeast to San Diego Super. I also changed the batch size to 8.5 by increasing the brew kettle trub loss, i don't want any hop debri in the fermenter. I might try the funnel and screen when going from kettle to fermenter. Based on Nearly Nirvana which is based on Sierra Nevada, it is a tad bigger. I was going to do 10 gallons but only have one fermentation chamber. I am going to ferment at a much lower temperature than normal, maybe 65.

Added Gypsum and I am pretty sure it is what is giving the beer a very mineral astringency (not sure on how much i added). I can barely drink it. Dry hopped in the keg, i need to stop doing that, used paint strainer for boil kettle.

Brewed 3/24/2012 - Single Infusion mash at 154. Measured original gravity was 1.055. Measured final gravity was 1.015. This wasn't quite as malty as I would have liked. It was a little thin for some reason. I might try adding a little more malt or maybe even mashing a bit higher. I thought the hop bitterness was well balanced for how thin this was. It was very sessionable and a great after work brew. The keg did go fast.

Brewed 1/16/2012 - My first full boil brew, what better way to try it than with a heavily hopped double IPA. I boiled 6 gallons in a turkey pot and there was 2 pints added when I sparged the grains. Luckily there wasn't any boil over because I was at the top of pot. I had to watch it like a hawk with spray bottle in hand. I did this on my kitchen stove and it took forever to get to a boil. It also took forever to chill this much liquid. Time to invest in a outdoor burner and a real wort ...

Brewed 12/8/2012 - Boiled as much as I could in my blue enamel pot. Boiled 70 min. Steepened grains for 20 min. Brought to 170, put on lid and let sit for 20 min. Used part spring water and part tap water. I pitched the yeast at 72. Put in chiller and set to 68. I forgot to take the OG. On 12/28/2012 the final gravity was 1.020. It tastes very good, clean and not as sweet as my others.

A great tasting extract porter recipe. It wasn't quite a Sierra Nevada but it was tasty. I bottled with 3/4 heaping cup of priming sugar. I steepened the grains for 35 minutes, added the extract and it took 17 min. to come back to a boil.

Brewed 6/23/2012 - A very hoppy amber ale. Base off a Nugget Nectar clone. It is a little bitter but has good malt to balance. Next time I would use a bit less of the bittering hops. I did a single infusion batch sparge at 154 in a 10 gallon water cooler with a stainless steel braid for the filter. The strike water was 5.86 gallons at 165. 1st runnings was 4.1 gallons, a little more than calculated. Sparged with 3.75 gallons at 185, brought the grain to 167.5. Going to try 171 strike temp, because grain and air is warm, like 80F outside. Mash started at 153, 1F too warm. should wort into ferm be 7.5 or 8.5? Find out after this batch. Used 1oz Jarrylo 14.2 hops for first wort mash out was 183, in mash was 165, could go a bit warmer, colloected 11G, 1060 Windy, boil wasn't strong enough so OG was low

6F hotter would be 169.14. I guess i will try it, it is cold out. I went with 170/171 and it was still 2f too cold. It was less than 50f outside so the keggles where cold. Heated with brew kettle heater.

I am going to try 165F strike water temp, 6 degrees hotter. Still 1F too low, it got hot and then i chilled with some ice so maybe it was on it's way down. 165 = 149 mash, had to heat a bit Gravity too high again :(

Add 2 degress to strike temp when not preheating tun. Mash temp was 2 degrees short even though HLT was 164. added some water to bring it up, i did only add 7 gallons of water so maybe that was why. Seems like i collected more like 10 gallons, not 9. I will see how it ends up.

Mash temp was 154 @ 40 min in 1/20/2014 - Fermentation temp was around 68 and seemed a bit slow. I threw on the fermentation wrapper/heater. 1/21/2014 - Woke up and temp was 71, turned down heater and added cooler ice and set to 69 Dry hopped on 2/5 or 2/6 w/ 2 ounces of amarillo simcoe

Mash temp was 1 degree less, didn't use 1 gallon boiling water for per heat of tun, just hot tap water. I also was about .5 degrees low on strike temp. Temp dropped almost to 149, it was cold out. This will make for a drier beer. 1051 @ 65F before boil and sugar. Started at 69, temp rose to 72 after 24 hours, cooled back to 69 for 12 hours. 1/14/2012 brought to 70. Very clear, filled the keg and had to dump out some beer. Tasted good, a little yeasty

15 min boil, DME clumped up, Start to finish, 2 hours. 12/19/2012 - Gravity is 1.012 - Added 2 OZ. of Cascade Trouble with CO2. Super carbonated and then ran out of gas. Still having issues with CO2, way over carbed. Took off gas and I keep burping the keg.
