I knew nothing about brewing until I asked for a homebrew kit, after being nagged about what I wanted for Christmas 2014. I knew I liked beer, so I got a homebrew kit. In the back of my mind it was because CRAFT BEER had dawned on me that year when I happened to taste an amazing beer I tried by chance at a bar for a work mates leaving bash. I used some specialty Malts, but don't know what categories they are in... doesn't matter anyway... Low efficiency, but hey it's my first mash, wort tastes great. I don't know where all the water disappeared, I put in 45 litres got 36 out? WPL0001 changed from 74 to 85% efficient to match readings, this is due to low mash probably. See brew session for more "changes" during the brew

20L @ 71 3L@ 100 stage 2 sparge as usual 10 litres in 2 batches of ~5 till 33L in kettle. (1 batch actual) Add water if required to fermenter.. Added 4 litres to fermenter. (1 gallon) upto 5.5 Gal pretty frothy so couldn't really tell. Lost so much wort to the hops, and water boil off. Crazy wet hops, I had to squeeze them out. origial batch was 27L. with 34 litre boil. 75% grain efficiency. Wait wrong OG reading... 1.078!! AArrr. Added another Gallon of distilled water. to drop it to 1.066

I have adjusted the main recipe which was 43 lite batch from 46L boill and 86% efficicency to 36l batch , 45 boil and 60% efficiency. Cut back the dry hop by about 4 Oz of cascade and citra.

Made with harvested yeast (1 month in the fridge). Surprised that my harvested yeast worked. 3 weeks fermenter, 1 week bottle a bit sweet and some hint of sulphide after taste, 2 weeks bottle tastes better, mellowed good bitterness, 3weeks well rounded, no after tastes good bitterness, no sulphide at all. Best IPA yet, the glass lasted about 3 minutes. 4 weeks, this beer is actually what I wanted! IPAs do age well.
