-Racked to fermenter on 9/25. Did not pitch yeast
Fermentation held @ 66
BIABEfficiency is way too low, need to adjust mill or double grindMost of the fermentation was performed at ~82F for 3 weeks
Day 1 MashDay 2 Boil
Cooled to 67F before pitching yeast. Ferment @ 67F
6.55% ABV
Mashed Friday night, did not rinse grains. Boiled Saturday morningFerment @ 66F
Ferment @ 68F4/30/16 - added dry hops
Tastes amazing, Light, fruity. Very aromatic. These Mosaic hops are awesome. clean taste, does not really taste like a wheat beer, likely due to using US-05. Could probably get the same result without using the wheat. this could easily be a SMaSH beerDefinitely will make this againDry hopped 7 days total (3 of those were cold-crashing);Kegged at 40 psi for 24 hours, dropped to 20 for 12 hours, then about 15 for 12 hours before lowering to 10-12 psi for serving.
Rinsed grains with ~ 1 gallon @ 170Forgot to heat up sparge water, so had to mash ~ 15 minutes longer than planned
Steeped grains in 1g @ ~150 for 30 minutes. Rinse grains with about 1qt @ 170Chilled to 66 and pitched re-hydrated yeast
-BIAB first attempt-Actual strike water temp ~ 163w - Added 5.2 stabilizer and campden tablet to all water-Mashing in Kettle retains MUCH less heat. had to add heat to kettle directly mid-mash to raise back up to target. it had dropped to about 147.-Pitched about 72 ~500mL starter (decanted about 1L)-mixed up hop amounts, put in 1oz Centenial and .5oz Fuggle)
Pre-boiled all water; All water came from fridge filter.Batch Sparged - Ended up having do an extra sparge (3 runnings total) 5 gal batch (~6.75g pre-boil is pushing the limits of a 5 gallon mash tunWas only able to get wort cooled to ~74; Waited a couple hours before pitching yeast after xfer to carboyDoing split batch with this. Bottling 1/2 as is. The other 1/2 has ~ 1/3 of an oak spiral added to it. Will check every few days, probably leave it there up to but no longer than 2 weeks. ...
i had to add a lot of extra water to reach mash temp. next time use water that is a few degrees hotter than the strike temp recommended.Pitched yeast @ about 70ish.trying to keep fermentation ~ 67-68 -- ended up being between 66-69 most of the time
