added 1.5 DME to get og to 1.56
added 1# of Light DME 15 minutes left in boil as OG was low at 1.039 and got OG up to 1.045. dry hopped with .5 oz of both hops on 1-16-24.
added 1.5 lbs of DME to make up for efficiency being low. Over did the DME as OG is higher now that it should have been. secondary fermenter 7 days,
after 4 days of fermentation added 25 oz of Raspberry Puree and stirred. Secondary fermenter 9 days later. added 3.5 oz of DME to secondary in 16 oz water boiled 10 minutes.
we added 1 pound of DME to Wort prior to boil as originally we were missing our numbers after full mash to get dry hopped first addition day 9 (7-12-2020) (no foam on top). added 3 oz of each instead of 2.8 oz of each. Sunday 7/19 last hop addition made 1.5 oz of Mosaic and Citra and 2 oz of Eldorado. Kegging on 7/22.
First dry hop addition was on Nov 16th and the last dry hop addition was done on Nov. 25th.
4 weeks primary fermentation then to secondary. 4 more weeks in secondary prior to bottling
Mash: 4.5 gal. 45 min. at 150 degrees (actual was 152), ramp up 15 min. to 170 (added 2.5 gal. boiling water and let resit) (and actual was 173), Added gypsum (1.8 teaspoon) and lactic acid (.6 teaspoon) to mash water,

irish moss .5 tsp 15 min not as below, Used just over 3/4 cup of corn sugar as i had just over 5.75 gallons to bottle.
dry hopped on day 5 of fermentation no visible signs of continued fermentation at this time. Will let dry hop for 7 to 8 more days prior to bottling.
Followed Recipe except not dry hopping for 21 days. Will dry hop for 7 days. Dry Hopped on day 7 following brew day when fermentation was complete.
Brew date: 4-23-16, Used PH stabilizer and chlorine filter
Malt: Used .25 oz of crystal 75 and .25 oz of 120. Used White labs Monastery yeast which use to be called Trappist. 3/4 cup one table spoon corn sugar for priming sugar used.
- Used PH stabilizer for water treatment. - Made and used Yeast starter with yeast night before- Dry hopped after fermentation complete on 1-10-16 with 1 oz Cascade, 1 oz Amarillo, .5 oz Simcoe and no Centennial hops. Will leave for 8 days and then bottled with 3/4 cup corn sugar.
Homes brew store did not have any Whirlfloc tablets so went without. Instead boiled at high temp. I did 1.3 mash thickness and should have gone with a 1.25 ratio.
- used PH stabilizer-
Preheated mash tun prior to mashing with 1 gallon of boiling water for 30 minutes. Batched Sparge water in 185 and final mash out 158. 7.75 gallons out of mash to start boil. Corn sugar added at 0 minutes. With last hop addition at 0 minutes allowed to steep for 40 minutes before starting wort chiller.
