1) Northern Brewer did not include my bittering hops (Nugget). Instead I substituted 1 oz of the Mosaic.
got anxious and pitched 2 pack dry yeast in low 80s temp. Krausen with 4 hours. Expect off flavors, or keep in primary for extra 2 weeks to clean up
- OG was going to be low ~10 pts, so I added 1 lb of DME to the boil at 15 minutes left.- raised temp from 53 to 63F for diacetyl rest; krausen has started to fall; current gravity 1.022- 8/8/21 transferred to bucket, started lagering FG 1.009- added dry hops

28 Jan 18 racked to secondary (SG = 1.006; 6 brix) on top of pureed mangoes (8lbs or 9 mangoes). Taste and color are good. SRM may be a little darker than suggested here. 03 Feb dry hopped 1 oz Amarillo hops. FG = 6.5 brix (1.009). ABV = 5.74 (target ABV was 5.9; close!)Sample tastes is good! Briess cherry wood smoked malt. Transferred to secondary 28 October.
10 Sep transferred to secondary; SG 1.015. 24 Sep FG 1.013. Began layering by dropping the temp to 60F (15.5C). Dropped temp every 12 hours by a few degrees until reached 34F. Been there for a week. Today started slowly raising temp. Possibly bottle Monday 9 Oct.
STUCK FERMENTATION?!?!? Fermentated near the bottom range according to directions for the first 14 days. Transferred to secondary, check SG only it had hardlyfermented at all. OG (taken with hydrometer) was approx 1050. SG at 2 weeks later (with refractometer) was exactly 1043. Raised the temp to the high end of the range, approx 55 degrees. It is now day 18 and the SG is 1040. 4 extra days and only attenuated 3 points. I shook the bucket to stir activity and will check again day 20 or 21. More ...
Dry hopped 23 Feb (18 days) 1 oz; cold crashed 8 days, bottled 03 Mar.
gravity reading 6/11/16: 1.014When this batch was brewed I forgot the strainer inside the mash tun. While the grains were steeping I ran to a couple of stores looking for rubber gloves to use to put it in. As a result, the mash took almost 2 hours.When bottling I noticed the color and body look. We'll see!

- 4/25/2016 8 days in the ale pail and still has Krausen on top- 4/28/2016 still krausen; dry hopped cascade hops- 5/6/2016 bottled; a lot of sediment in the bucket, so i racked to a pot filtering with a paint strainer then bottled; 1/2 cup water and 1/4 cup honey; 16 x 12 oz bottles and a 3 liter grolsch; straight to the fridge
