Trying to brew something like Beyond Modus 9 by Wild Beer Co, without the barrels! This is the base beer (a bit stronger than a flanders red but a bit like an old ale too), a funky red ale. To this I'm going to add a small batch of imperial strength wort (for a quad) with a repitch of the yeast blend, then blend the two and age on bourbon chunks. My first attempt at a Flanders Red Sour Ale. I enjoy this style very much for its tart cherry-like flavors. Fermentation with Wyeast 3763 - Roesalare mixed culture blend. Cherry juice added at secondary. Secondary aged for 6 months and then transferred to a second use oak cherry brandy barrel.
