- Added 40 grams of crushed Himalayan sea salt with 15 minutes remaining. Added 10grams crushed coriander with 15 minutes remaining. - Added 15 grams of keylime peels into the boil with 10 minutes remaining. Added another gram (5 keylimes) of fresh zest into the boil during whirlpooling. Beer was brewed on a day it was about 108 outside so we got a little sloppy as the day wore on. First the recipe was lost early in the morning then the ice for the cooling took longer than expected to get to the house which extended the boil and delayed the hop additions. Notes on the brew session were not kept as they should, but overall the beer is tasting good after initial fermentation. transferred to secondary on 5/12 - 1.014 gravity great flavor
1 week post brew - 1.022 gravity.... raised temp slightly to 13*C up from 10*C... beer holding at 53*Ftest again in 3 days and raise to 60*F for D-Restforce carb for two days at 32 psi - reduce to serving pressure for two weeks on 5/14
