Waited 2 days (made starter Sat Night) and then started brew session; (Mond night).Heated 4.125 gallons of strike water to 164. Hit 153 instead of 152 but let it go. Made 1 L yeast starter by boiling 1 L of water with Camden tablet and adding 6 oz of dry malt extract. Could only use 2.63 lbs of rye instead of the 2.5 because I measured incorrectly. Collected 4.5 gallons (37lb 8.8oz) at (1.5 quarts per lb of grain) of water for mash.Pre-heated tun with boiling water and heated strike water to 166. 9/21: Made a yeast starter with 1 L of water (used Camden tablet) and 6 oz of Pale DME. 9/22: Brew day:Heated mash tun with a few gallons of water. Tun sat after draining for about 10 min. Outside temp 72F. Heated strike water to 158. Hit mash temp of 147 and added boiling water to bring to 148. Rested for 75 min.First runnings ended up with a smidge under 2 gallons. Used 3.9375 gallons for strike water (1.5 quarts per lb). Pre-heated mash tun with boiling water. Heated strike water to 164. Hit 152 exactly after adding grain. Sacc rest for 60 min. Heated 4 gallons 5.3 oz sparge water to 170. First runnings yielded about 2.75 gallons. Used most of sparge water to get to 6.5 pre-boil volume. Then heated and added another gallon which ended up being way too much. Ended up with a least a gallon over in the fermenter. OG 1.032 FG 1.002 after 2 weeks. Bottled with 3/4 cup corn sugar in 2 cups of water. Made 2 cases 5 beers.
2 days prior to brewing make a yeast starter using 4 L of water and 14.5oz dme. Boiled for 10 min and added 1/4 tsp yeast nutrient after removing from heat.
