-Strike water was 3.3 gallons half RO/half ground water-added 1 campden and 15g gypsum-Mash temp was way high (158), so we added .4 gallons of RO and temp was 149 so we began 90 minute mash-forgot yeast nutrient until chilling. tossed cut packet at 160-180ish-OG: 1.056// 13.79 brix -Used northern brewer calculator to carb to 3.2 (3/4 cup sugar w/ 2 cups h20)-final yield 5.25-FG: 6.57 Brix (1.007 FG w/ conversion)-abv 6.5%
-added 1 campden tab and 8g gypsum to mash strike water (~3.75 gallons)-mash temp remained steady at 152 after 60 minutes-transferred XXX of first runnings-whirpooled/facetimed w/ the intern for 5 minutes-rested for 25 prior to initiating cooling, temp = 180 (212 - 180)-began chilling @ 180-OG 1.057 (collected ~5 gallons)-FG 1.012 (6% abv)

Brewcipher calls for less h20 than brewgr-Added 3 heaping tsp of gypsum to sparge water (half RO/half Pasadena ground water) - Volume ~5.75 gallons-Sparged w/ water @ 179 degrees F ended up w/ 164 degrees F in the mash tun.-OG was 1.041 prior to the boil. Yeast nutrient added to 2L starter AND @ 5 mins in boil.Added maple syrup at flame on. Used wort to swirl in glass to get remaining sugar.Added molasses w/ wort to swirl around glass to prevent scorching.Added 10oz maple syrup at around 200 degrees to bump up OG.Aerated w/ pure O2 for 90 seconds.Took gravity reading on 1/16/16 - 1.018Transferred to secondary on 1/16/16
