Missed pre-boil gravity by A LOT :(Added 1.33lb of pilsner malt to bump up gravity points.

Added 9.10oz of Pilsen light dme to bring up to expected OGCouldn't find a 2nd can of apricots so I used peaches at end of boil.Added 0.25oz mosaic as dry hop after fermentation was complete.Added can of apricots as dry hop a day after mosaic were added.Added another 0.25oz of mosaic a couple of days after the apricots.

Couldn't get a good weight reading for the Cardamom so i ended up using about 8 - 10 pods, cracked.Used a whole can of apricots at flame out.Took the kettle off the stove and put in cold water before realising I hadn't added the apricots, so I took it out and put it back on to heat up. So the late boil hops and cardamom were boiling for probably about 20 - 30 mins in total.

Added 0.624lb DME to bring SG from 1.036 to expected SG of 1.043Made a starter from dry yeast packet, did not make any cell measurements or anything.Ended up filling only 6 bottles instead of the 8 I calculated, so some priming syrup was left over. Hopefully each bottle got enough (ended up being about 10ml per bottle).Injected priming syrup into each bottle with syringe prior to transfer. Transferred directly from the fermenter with my new 1/2" bottling wand, filled until overflowing. Gently ...

Pre-boil Brix: 9.8Ended up booking for 2 hours due to apparent low pre-boil gravity but ended up with only 1.4gallons. next time just boil for the 60 mins.Final ABV: 7.88%Transferred from fermenter to mash tun pre-filled with priming syrup, then filled with 3/8" bottling wand. Left too much headspace and ended up with acetylaldehye flavour.
