High carbonation. Wheat for head. Oats for mouth-feel. Pitch at 17*C ferment at 19-20*C to suppress saison character a bit to make it more session-able. Very low IBU but medium late hops for a fruity hop character - first wort the bittering hops to soften the bittering.

Based on 1850 Truman XXX but backed off IBU's a bit and OG & ABV a bit lower b/c it should ferment out lower than 1.028 (??) we'll see ..... Basically aiming for an imperial mild - as in old school vintage mild - where mild refers to a young beer not intended to be kept or aged - strong hoppy pale/IPA like floral fresh fruity(?) interesting.

3rd June 2017 Grav check 1.024 after 75hrs - tastes fruity & boozy & bitterness balances well with residual sweetness and maltiness - YUM YUM! Still fermenting.

Overnight mash started 26/02/2017. Sugar is caramelised in a pan & added to the boil 15min from flame out. Yeast starter used was approx 800ml - not sure if this would significantly reduce OG figure or not. Already bubbling away nicely after only 3 hours - this one hit the ground running!!
