Version 3 of the Saison - Differences Last 2 versions came off a little bit too funky and too much "breadiness" on the nose. This version will hopefully eliviate that by fermenting it clean and racking it off of the yeast cake. I also have a lighter grain bill so that it will end up being a lighter saison. - Ferment with 3724 for 3 weeks - Rack off into secondary to condition with dreggs

First brewed in honor of the 200th anniversary of the Battle of Waterloo and named for Arthur Wellesley, 1st Duke of Wellington. This is a French/Belgian style farmhouse beer but hopped like an traditional British IPA. It is said we all face our Waterloos but I hope you all face it from the British Side of the field.
