Notes:
I wasn't able to ferment at a higher temperature and would like to try this next time. As is, the beer had a great spicy, fruity flavor and aroma. The american hops mixed wonderfully with the spiciness from the yeast. When young, the hops were more dominant, but as it mellowed the balance has changed. It was at its peak around July, but remains excellent. Next time replace the simcoe with galaxy, as was originally planned.
