Dry hop 5/24
Diacetyl rest on 2/22. Cold storage 3/8.Refreshing, but more like a standard American lager than an American pilsner. Upping the bittering hops in the recipe.
Diacetyl rest 1/6, target gravity reached.1/24 Done bottle carbonating, lageringFlavor was a little more roasted that I was going for, adjusted the recipe accordingly. Very drinkable and could be excellent with some tweaking. Will rebrew again.
11/23 Target gravity reached, beginning diacetyl rest. Lager phase beginning on 12/191/24 Extremely drinkable. Lime shines through just enough to give it the flavor I was looking for without being overpowering. No changes to recipe.
Racked onto mango secondary 9/30/19. Dry hop 10/2/19, bottle date set for 10/9/19.11/1/19: Good as-is. Mango subtle but evident, just how I intended. No changes to recipe.
Off flavor, most likely a wild yeast introduced during secondary. Improving pasteurization process accordingly. Flavor is a little sour but still drinkable and somewhat refreshing cold
5/31: Primary fermentation at least 90% complete (1.021sg), added 3 ounces cocoa nibs to secondary.6/5: SG reading 1.020 - cold-crashing. Predicted SG is 1.021.
Dry-hopped 4/9. Too much hop particulates making it into bottles, improving the process.
