Overcast and cool. About 55/56 degrees at the start. Brewing on deck.
Used a quick lager method found from (http://brulosophy.com/methods/lager-method/).It was about 6/7 days before I moved to step 2 - ramp up temp to 65°-68°. Half way for fermentation was around 1.035. On day 4 or 5, it was at about 1.037. I let it go another couple days and ramped up the temp without another reading.
Missed target mash temp. Not sure why. Strike water was 162/163. Wouldn't think that would cause mash to be four degrees off. Pre boil seemed off but OG was 1.040.
Wanted to start with 3 gal of water in mash at 148, then mash out at 170 by boiling 2 gal. Got strike water to about 159 and mash was only around 140. Heated 2 more gal and added gal at a time to get temp up.
Next time will try adding syrup in secondary or use as priming sugar while conditioning. Final abv 6.17%.
Pre boil gravity was low. Decided to do 90 min boil in hopes of getting OG up closer to target.Had semi-stuck sparge, so boiled 6.5 gallons instead of 7.Used amylase during secondary fermentation and hit way lower FG then predicted (1.006). About 6.3% abv.
Forgot to take OG reading at beginning of fermentation.
