Good brew day. Mash temp was all over the place (probably due to opening it up and stirring), started at 70, then ended at 63
Brew day went well. Total time was around 3.5 hours. Used recycled yeast from my Wee Heavy, so I think that contributed to the high FG, and thus low ABV. Ended up getting a really low ABV by the end of fermentation, so I added 500ml of whiskey to the final 10L volume.
Brewday did NOT go well. My mash water amount was WAY too low, but I don't have a huge kettle, so it's a little unavoidable...Ended up hitting my target OG...but with about HALF of the total volume. So, I added about 5L of water, and plan to add 500g Light DME boiled in 500ml of water on fermentation day 3. This should bring the gravity from a pitching gravity of 1.050 to ~1.070.
