Use 5.75 gal of strike water at 159 F. Grain will soak up 1.25 gal of wort. Sparge with 1 gal of 170 F water. Should be left with 5.5 gal at the start of boil. Boil for 1 hour, the Anvil System will boil off 0.5 gal per hour in 120 V mode.
A "kitchen sink" beer to use up older malts; overloaded with caramel malts but hopefully balanced by the bittering hops. Piggy-backing on Gemutlichkeit Leicht's Kolsch yeast but fermented at higher end of the yeast's temperature range, hopefully for some mild fruitiness. Produced 5.75 gallons @ 1.054. Final (corrected refractometer) gravity: 1.012 (~5.6% abv). Bottled with 118g sucrose.
