Protean @ 124 for 10 min (may be bodyless and no head retention).142 - 145 for 40 min. 155 -160 20 min. Did not turn out too thin after conditioning in the fermenter I think. Foamed up good when I decanted it for testing. Rested at 35F for 1 month. Took it down slow to 35 over a two week period. Added a packet of yeast at bottle time for insurance.

Tried a double infusion. Brought temp up from 141 to 150. Stopped because mash was getting to thin. I added boiling water to raise temp. Wort is sweet like candy! This is going to be dry.

Took off lemon zest with a potato peeler. Added Juice from the two lemons also. Strained out Razz seeds through cheese clothe. At secondary added pound of frozen Razz . Strained through cheese clothe also. At Bottle time there is lots of Lemon and very subtle Razz Flavor. Needs more Razz.

This wort worked hard an is still working as of 10/12/2016. Gravity is now 1.010 well below expected finish. Bubbles are still rising and getting a pop from the fermenter about once a min. Tempo has been about 62-65. A little below recommended temp.
