I am brewing this a little darker and higher gravity than I normally would, because I am blending it with a lighter beer that I have had aging in my whiskey barrel. The whiskey barrel beer does not have enough maltieness, so I am brewing this in order to kick it back up near trappist quad range. The whiskey beer is 18 pounds of belgian pilsner, and 3 pounds light candi sugar.

Batch sparged in a 10-gallon cooler for 90 minutes at 154.Star anise addition was 1/4 ounce boiled for 10 minutes.11/29/12: Yeast starter (2.5 oz. DME, 1/4 t yeast nutrient, 1 qt. I found this recipe in a homebrewing book and was hoping that it would turn out like the Chimay Grand Reserve Blue Label (which is one of my favorite beers). Unfortunately, it was nothing like the Chimay Grand Reserve, but it was very tasty. This beer packs a punch with a dominating maltiness and smoothness that allows the ~9% alcohol to sneak up on you.

Brewed 9/3/2012 - Brought to 156, added grain and covered. turned off heat and let sit. Temp held at 158. I put my extract and candi sugar in the sink with hot water to soften it up.
