An attempt at an Australian sparkling ale. Sadly, can't get WLP009 or Australian 2 Row, so making do. I have 1098 in stock, recommended in Beer and Brewing mag. Vic Secret is on hand too. Galaxy would be a good choice. Mash temp 150-152f, raise to 165f for mash out. Ferment at room temp 65f to 68f. For extract, try 3# Gold 3# Pils LME and .5# Light DME. Steep C40 20 minutes.
