10/31/24 update. Clone of Galway Hooker Irish Pale Ale from Oranmore, County Galway, Ireland. The name is derived from a traditional Galway fishing boat. The original is about 4.3% and 35 IBU. The critical component is the Pearl malt for its bready flavor, but Golden Promise probably close enough if Pearl not available. MO is more toast than bread and may be too much. I specified US-05 as I have it but WLP001 or WY1056 are equivalent for liquid yeast.

Based on https://www.homebrewersassociation.org/homebrew-recipe/angies-bursting-citra-ii-aka-juice/ Mash malts at 152F and allow to rest one hour. Sparge at 168F. Boil 60 minutes. Chill to 70F and oxygenate. Ferment at 70F. “Active” dry hops are added 2 days after fermentation starts, and the “complete” dry hops are added after terminal gravity is reached. Allow to sit on a second dose of dry hops for 3 days, and then rack to secondary for a week. Rack to a keg, chill, and force carbonate.
