Made a huge mistake - forgot to attach the bazooka tube so we poured wort off the top of the mash tun into kettle and replaced bazooka - didn't pour it back in to drain through grain so massively missed OG
54.43% efficiency :/Swamp cooler temp control...Gravity reading 8/20: 9.8 BRIX, ~7.1% ABV - maybe that efficiency calculation wasn't correct??
I think PH strips are just too hard to read - the actual color suggested lower than 5.0 but then I read that it is almost impossible to achieve that much acidity without additions.Pre-boil volume was missing as I don't have etchings on my new kettle.Efficiency calculation (http://www.brewersfriend.com/brewhouse-efficiency/): 68.3% - based on estimated 7 gallon pre-boil volumeGravity reading 8/3: 1.017Estimated FG from refractometer calc: 1.007
Very hot, humid day - lost less than planned through boil off and very difficult to chill beer. I think I must have taken the pre-boil gravity sample before enough first runnings - doesn't matter though as we hit OG pretty much.
Things to remember:1. Heat strike water to ~175F as the mash tun is going to absorb some heat - let it stand for 5 mins to cool to ~166F before adding grains2. Stir mash three times throughout first hour3. Heat sparge water to ~180F4. Follow sparge instructions from: http://www.homebrewtalk.com/showpost.php?p=3532529&postcount=55. Need to add .6 gallons to sparge water kettle after first batch sparge

REMEMBER: add 0.5 gallons to sparge water kettle between 1st and 2nd sparges (it's too small to heat all the water!)Brew day notes:- Had a stuck mash due to using ...
Missed target mash temp by ~8 degrees initially and had to top up with boiling water multiple times. Took too long adding grains as I was on my own and weighing some of them at the same time. Need a better thermometer too as it takes too long to take readings and I don't trust it! The upshot of adding this extra water (and not accurately accounting for it in the sparge water volume) was that my OG came in well under target.Fermented for 9 days at ~60FGravity reading: 03/04/15 1.022 - moved ...
Forgot to measure mash final temp so had to guess! Boil size needed to be 7 gallons to account for 1g/hour boil loss and 0.5g trub loss. Only ended up yielding 4.5 gallons in fermenter. Only got 63% efficiency which will lead to slightly low ABV - things I will try next time: pre-heat mash tun, stir up initial mash a couple more times during mashing, leave batch sparge in longer (15 mins) and do a second batch sparge. Turns out my sparge water temp was far too low - I used the same as the ...
