Brew day 10.24.19. Used 4 gallons of strike water at 170F. Mashed at 154 for 90 minutes, then added 1 gallon of near-boiling water just before runoff. Batch sparged and collected 4 gallons (from a semi-stuck mash). Added 3 gallons to the main kettle and 1 gallon (of the first runnings) to a side pot, where it reduced (about 50%) and caramelized and darkened, then it was added to the main kettle. Boiled 75 minutes. Collected just under 3 gallons, though my 1-liter starter brought it close to 3 ...
