Seeing as I was apartment brewing, I wanted to try a quick dry yeast batch with a shorter boil and hop bursting for bittering.
Steve and I decided to brew a 5-gallon batch of wort and split the batch to dry hop and ferment on our own. I still have about 60 pounds of grain that needs to be used, and I had some discounted hops...Zythos, UK Target, Mandarin Bavaria and Wakatu that may be used in this brew. I will likely use the Zythos as a dry hop.
My try at a Belgian IPA using Westmalle's yeast.
