1. Add 1.675 gal to total water for mash in to compensate for false bottom.2. Began recirc at sach rest. Added dark grains at mash in not vorlauf.3. Overshot mash temp. Up to 165. Brought 3.5 gal water up to 170 then added grains in steeping bag along with 2oz Columbus in separate bag. Steeped for 40 turning heat down then off for last 30 minutes final steep temperature was 148. Sparged grain and hops with 1/2 gallon of 170 degree water, therefore 4.5 gal. Added 9.6 lbs dme that brought wort to within 1" of rim! Achieved hot break without incident via constant stirring. At 30 min started 1 gal separate boil with 1.5 lbs sugar.
