Pliny the Elder first wort and late hop experiment Brew Session

Brought 3.5 gal water up to 170 then added grains in steeping bag along with 2oz Columbus in separate bag. Steeped for 40 turning heat down then off for last 30 minutes final steep temperature was 148. Sparged grain and hops with 1/2 gallon of 170 degree water, therefore 4.5 gal. Added 9.6 lbs dme that brought wort to within 1" of rim! Achieved hot break without incident via constant stirring. At 30 min started 1 gal separate boil with 1.5 lbs sugar. Started to cool with ice bath in sink but not very effective. At 15 minutes added whirlfloc and wort chiller to boil. At 1 minute added flavor/aroma hops. Added sugar water at flameout - had just enough room! Cooled to 75deg via wort chiller. Witnessed cold break. Gravity = 1.118. Transferred to fermenter and added 1 gal water to achieve 5.4 gal at 1.096 gravity. Next time add water 1/2liter at a time. Pitched yeast starter and rested at basement half landing @ 65 deg.
