Special Instructions

1.
Heat 9 gallons strike water to 165 deg (assume 1.33 ratio and grain temp at 65). Treat with 3/8 teaspon 10% phosphoric acid.
2.
Dough in grist and eliminate dough balls. Measure mash ph.
3.
Add 1 1/2 tsp CaCl2. Measure mash ph. Bring mash ph to 5.2-5.3.
4.
Carry out mash with constant recirculation.
5.
Mash out at 168 deg at end. Simultaneously heat 8 gallons sparge water to 168 deg. Add <1/2 tsp phosphoric acid to bring sparge water ph to 5.5.
6.
Confirm conversion. Vorlauf and empty first runnings. Add first wort hops. Note volume collected.
7.
Batch sparge/vorlauf until preboil volume collected. Measure pre-boil volume. Measure volume lost to mash tun.
8.
Begin 60 minute boil with hop additions.
9.
Add whirlfloc and yeast nutrient at 15 minutes. Add immersion chiller.
10.
Cool wort to 65 deg. Measure Original Gravity.
11.
Transfer 5.5 gallons to (2) fermenters. Aerate. Pitch yeast.

Notes:

Transferred to corny. Good hop presence but a much lighter bodied beer than anticipated. FG was 1.010 for the 1056 yeast. 1.012 for the 1272 yeast which was bottled 12/14.
