1. Add 1.675 gal to total water for mash in to compensate for false bottom.2. Began recirc at sach rest. Added dark grains at mash in not vorlauf.3. Overshot mash temp. Up to 165. Added heat and temp was not rising. Suddenly jumped faster than controllable. Next time go slow! Or use boiling water infusion!4. Add .5 gall to sparge water cooler waste.5. Began heating strike water with 30 minutes remaining. Or heat 10 gallons to 172 concurrent and pump to halt6. Not achieving conversion. Mashed ...
