1. Add 1.675 gal to total water for mash in to compensate for false bottom.
2. Began recirc at sach rest. Added dark grains at mash in not vorlauf.
3. Overshot mash temp. Up to 165. Added heat and temp was not rising. Suddenly jumped faster than controllable. Next time go slow! Or use boiling water infusion!
4. Add .5 gall to sparge water cooler waste.
5. Began heating strike water with 30 minutes remaining. Or heat 10 gallons to 172 concurrent and pump to halt
6. Not achieving conversion. Mashed for additional 60 minutes. Still black.
7. Gravity points 245.
8. Up boil rate to 1.25/hour.
9. Try hop spider.
10. Add ph acid to all water prior to start
11. Pour off starter water after chilling for 1 hour
12. Preheat hlt with 1gallon boiling water
13. Insulate mash tun
14. Move mash tun thermometer to sight glass
15. Add hop spider and counterflow chiller
16. Score mash with 2" grid
17.use sst burner for hlt
18. Use boiling water infusion calculator to bring to temperature
19. Boil lightly
