Try to start out with 5 gallon mash and 2.5 sparge. starting water temp was 167. I mash ended up at 157. water adds to simpson spring 10 gallons 9.87 - calcium chloride 4.25 - gypsum add 3/4 tsp of citric acid to mash PG=1.045, 11 brix OG=1.056, 13.8 brix, tilt = 1.063 FG=1.018 % ABV
