Brewed on 2/20/21: OG: 1.054 Beer boiled too much and came out with a 1.056'ish gravity w/ 4.5 gallons volume. Topped off with .5 gal of distilled water for a volume of 5 gal @ 1.054. Fermented at 65-68 for a week. Steady fermentation. DH then began raising temp to 70-71 for another week. Beer took 2 weeks to come down to 1.010.
