Had four 5-gallons buckets of homegrown apples in the root cellar that needed to be used or lost around Jan 1. Decided to make this cider.

Special Instructions

1.
Shredded apples by hand with Mandolin
2.
Used Big Stix immersion blender to make pulp
3.
Pressed by hand in nylon bags
4.
Put juice in 5 gallon glass carboy, O.G. 1.055
5.
Added pectinase (4 days later S.G. 1.020)
6.
Pitched yeast at room temperature (expired 4 years stored 4C)
7.
Racked to a 6 gallon carboy after 7 days
8.
Topped off with 1 gallon Musselmans cider (its S.G. 1.048)
9.
Racked to Jugs after 10 days, S.G. 1.005
10.
At carbonation, sweetened with 1/2 tsp per liter with homemade nonfermentable sweetner (Daddy's sweetstuff 1:3 citrate)
