Add 12 gal. water to 15 gal. kettle and mash in. assuming grain will take up about 2.5 gal volume.

Sparge with enough water for 12.5 gal. boil

Add sugar last 10 minutes of boil

Ferment at 52* gradually up to 68* over 3 weeks
