Special Instructions

1.
28gal strike water(1.1789 qt/lb of grain) with 77.35g 85% phosphoric acid
2.
Add 30.2g gypsum & 8.9g calcium chloride to strike water
3.
Fill HLT to 21.5gal & add 45.5g 85% phosphoric acid
4.
Rest mash @ 145F for 45 minutes then heat to hit 155F
5.
Rest mash at 155F for 15 minutes then heat to hit 170F
6.
8.5 gallons of water absorbed by grain (.38 quarts per lb of grain loss)
7.
Recirculate till wort runs clear then fly sparge with 21.5 gallons heated to 180F
8.
Boil for 90 minutes, add 1st hops with 60 minutes left in boil
9.
Dissolve sugar in wort then add with 30 minutes left in boil
10.
add Irish Moss & Yeast Nutrient with 10 min left in boil
11.
Start fermentation at 66F for 2 days then increase by 2F per day till hitting 78F
12.
2 step yeast starter 1st step 2L 2nd step 12L 218g DME 2L 436g DME 4L
13.
91g DME in 4L for 1.008 starter
14.
Use Either WLP530 or B48 TripleDouble
