Notes: back to no boil. Pasteurization rest at 160, hops in when the bag is removed. Probably lower OG due to larger batch because no boil off. Chilled down to about 90. There was a very full fermenter and a lot of residual. Gravity is super low. Both dry hops fell quickly but really did well to saturate thy sample from the fermenter. Carbing while I'm out of town at 10 psi. OG/pH: 7.2 / 5.2 FG: 3.5 Pitch: 5/10 9p DH1: 5/13 9a DH2: 5/14 9p Keg: 5/15 9p Review:

Notes: Upping boil hops but doing shorter, plus doing all CTZ kettle hops, upping specialty malt, upping dry hop. Blow off really bad at 4/11 9a. Still bubbling with a K on 4/13 9a. Dry hopped while yeast was still a bit active. Going forever. Not sure what's up. DH1 dropped in a day, did a second after tasting. Loral gave a lemony thing. Notes: First Melanoidin, first using CTZ in boil, move to hop layering again, otherwise straight forward. Brew day went as planned. Blew off after 24hr, then fell by 48hr although still chugging a bit. Dry hop dropped in under 24hr. Aroma is mild but highlights the yeast, so no second dry hop. Kegged easy. Kind of thin, not a lot of character. Blaming the hop burst. That's two in a row, time to change recipe. Tasting after a week. Incredible. OG/pH: 7.7 / 5.08 FG/pH: 4.1 Pitch: 3/19 9p DH1: ...

Notes: First C60. Mash pH must have been low given what it was after boil. Observe this and whether it will influence attenuation. It didn't impact mash efficiency which is pretty much 59% for every beer like this. Firsy dry hop fell in 12hr, and aroma was somewhat lacking. Added second dry hop. Partial Boil Process 1. Mash with 2 gallons of water, and 1g Gyps, 1g CaCl 2. Bring to a boil, add hops and 2g Gyps, 2g Eps, 2g CaCl 3. After boil add 2 gallons of cold water OG/pH: 7.8, 5.06 ...

Notes: first S-23, try upper 160s on strike temp again, lower boil and dry hop, El Dorado single hop, doing mini hop burst again to reduce bitterness, first honey malt. 8hr into fermentation there's a 1" K and it's bubbling steadily. Yeast was expiring this month. K dropped after 2 days but is still chugging. Sample at 2/27 was at 79 percent attenuation! Dry hopped, then it chugged more. Wow. Notes: more grain to get the ABV up due to lower efficiency, higher strike temp (166), partial boil, adding NaCl after Brulosophy result, first kolsch yeast, lower dry hop to add complexity since bigger dry hops in low ABV is not making much difference. Higher temp didn't matter, still dropped to 155, longer mash also didn't matter, efficiency still at 60%, but pH was right on, as was final numbers. Cooled to 100. Almost blow off on 2/3 at 9a. Notes: trying higher mash temp, lower IBU, putting cryo hops in during end of boil instead of dry hop, back to Munich, doing a mini hop burst with the cryo going second for only 5 min to preserve as much of the delicate stuff. Smooth brew day. Pitch went fine. A little yeast on the top after sloshing around. By 9pm there was a 1" K and it was chugging! Much slowed by the 8th. All flameout additions are hop teas made with pre mash brewing water. OG 1.047. FG 1.010 (5.1%). Lower FG than expected due to the low mash temp. Meh. Not much hop character at all, prob a pH issue with the teas. Something about the mouthfeel is unpleasant. Worst beer of the series.

Flameout are hop teas made from boiled wort. OG 11.8, FG 5.7 (4.6%). This is my best beer to date. Very hop forward, best hop aroma I have gotten yet, nice body considering the ABV, likely due to higher mash temp. Good head retention. Equinox and Columbus are a great combo! This beer had a 20m mash, 20m boil, and was bottled on the 9th day, and is incredible. Rules are made to be broken.

Flameout and 1 day dry hop additions are hop tea. OG 13.8. Finish 7.5 before tea (5.5%), 6.5 after. Nice hops on the nose at first but faded after a couple weeks, body is a bit thin. Very crushable, good head retention. Bitterness is right on. There is a mineral quality to it that is not great, possibly due to the post fermentation tea additions. Not very complex.

Flameout additions are hop teas. 13.3 / 7.1. Best beer to date, nice hop aroma, malt is great in the finish. Still a touch bitter. Some head retention issues. No off flavors at all given the 30m mash & boil. Body is light, like a session IPA.

No bittering hop additions. Fine crush. 40m mash. OG 13.8, FG 7.4. 15 bottles. Super bitter, but some citrusy and pineapple notes after it conditioned longer. Intense and too simplistic, but drinkable.

Citra addition was a hop tea. 40m mash (153-149) and boil. OG 14.2, SG 7.6. Big blow off. 14 bottles. 1.5 tabs. Over carbed. Very citrusy flavor, bitter. Mouthfeel is there, but needs some sweetness to even things out. Nose not there despite the 2oz dry hop.

Mash went 152.5-145 over 40m, OG 14.2, SG 6.9, 10 bottles. Cider like note, somewhat bitter, white grapefruit hops, too simple, drinkable. 3/10.
