I steeped the chocolate and roasted barley (in a muslin bag) in 1 gallon of water at 175 degrees for 20 minutes. The other grains were mashed normally but only had 5 gallons at the beginning of the boil (not 6 like normal). After the boil when the wort chilled to under 175 degrees, I added the dark grain "tea" to the kettle for a full 5 gallons going into the fermenter. I did it this way to eliminate any bitterness from boiling dark grains for a smoother tasting stout.
Mash temp a bit high to start.
What a fuster-cluck (might have to be my new name for this if it turns out). The first mash step at 110 was supposed to make some chemical that increases the clove flavor in the final beer. It created some kind of gelatinous mass that the Brewer's Edge did not dig. Kept burning on the bottom and tripping the sensor. After 3 times, I decided that another method was needed ... without adding heat through the brew kettle. Decoction! I pulled 1 gallon off, brought it to a boil and added it to the ...
Put the chamomile in during chilling just after boil stopped (like tea). Removed the bags after 6 minutes of steeping.
Trying a 1 step mash at 152 for 90 min.
Boiled sugar for 20 minutes. Cooled the pot in an ice bath. Pitched yeast at 65 deg.F. Bubbling after 1 day with little foam (clear glass jug).
Tripped the alarm on the kettle three times while bringing the mash temp up. Fourth time I went without the 1600W switch. Good so far. Added 8 pints pureed blueberries to the fermenter after 1 week (no steeping, just crushed in the food processor).
