Prepared yeast starter 3 days prior to brewing. Activity in starter had died down and was starting to clear on brew day. Prior to pitching yeast, ran oxygen stone from canister in wort for 45 seconds. Began fermenting at 69F in FastFerment 7.9gl conical fermenter. Activity started within 6-8 hrs. Slow fermentation until day 2, then krausen started bubbling up into the airlock. Pulled airlock and replaced with blow-off tube for next 24hrs.Day 3, Activity started to subside so i removed blow-off ...
Pre boil gravity 12.4 Brix.Post boil gravity 17.4 Brix.Mistake: Extended boil time to 70 minutes. (I forgot to add the 2# of candy sugar with 10 min left on the boil so i added it at the end of 60 minutes and and continued to boil for an additional 10 minutes, total boil time of 70 minutes.Fermenting at 75F (Unable to get fermentation temp down to stated range of 64F - 72F).
