Long-age, mixed-culture sour with zero hops - High temp mash. Simulated turbid by pulling 1 gal portions from mash prior to full conversion taking place. Added dregs from Side Project, Jolly Pumpkin, and Bruery, along with WLP677 Delbrueckii starter from a year-old sample.

This is the first test batch using lupulin powder (Chinook) during whirlpool and fermentation. We've chosen a red/rye IPA as the vehicle, as the spicy character of the rye should pair well with the character of the Chinook.

I've always been curious about doing a hop-forward yet low IBU beer, and I happened to have a bunch of spare supplies sitting around that fit the bill pretty well. This is an unconventional IPA (I think). Simcoe is added during primary, and then a plethora of hops are added for a few days in the secondary.

Our aim is a New England style IPA - Low bitterness, juicy, and hazy. As a test, we split roughly 6 gal of wort into 4 fermenters, with each getting a different dry hop (Galaxy, El Dorado, Mosaic, and Azacca) in two doses - primary and secondary.

We used our base Evangelizer pale ale recipe and swapped in Equinox and Wakatu hops (aiming for lime flavor). I accidentally added 4 oz of lactic acid, ruining it. Another triumph!

This is an American wheat ale that will be flavored with blood orange juice and bourbon, and it was inspired by the blood orange, bourbon, and sweet tea slushie at Maxine's on Main in Morton, IL. The aim is fairly low ABV from the primary fermentation, as it takes a considerable amount of bourbon to get the flavor we're looking for, and that increases ABV.
