All Grain Fruit Lambic homebrew recipe. This homebrew recipe uses the following ingredients: Pilsner - DE, Golden Promise - UK, Pureed Cherries plus limes, White Wheat - US, Galaxy Hops, Imperial - A20 Citrus Homebrew Yeast.
Mashed 6/21/21. Yielded 8.5 gal @ BRIX 16.6 / OG 1.073 because tun was overloaded w/31 lbs grain at 1.2 qt/lb. Can do 31 lbs in future, but hold back 2 gal water before mash-in to add after all grain is added. 8 gal cooled to 90*, added 2 cartons Goodbelly mango, and left in fermentation chamber at 90*. Remaining 1/2 gal put into freezer to serve as re-starter for 2 yeast strains.
Brewed 6/24. Pulled 4.5 gal of wort from sour kettle. Boiled 30 min, then added 1.5 gal water, 8 lbs cherry puree (MI vacation stash) and 12 small limes (Costco, cut in 12, squeezed, and thrown into fermenter). Yield 6.2 gal @ BRIX 13.2 / 1.054 OG. Fermented in guest bathroom tub (generally between 75-80*).
