Notes:

Oak chips added 1/7. Transferred to keg 1/22. Should have used less oak chips - Oak flavor dominates almost all else - Hopefully that tones down with a little age. Nicely tart, though. There were yeast rafts or a pellicle starting to form on the surface - Not sure if infected or if this kveik just forms rafts (though I think I remember rafts on the surface of the starter, and I didn't notice any funk). Refractometer reads FG 1.032 / 7.7 BRIX. With a correction factor of 1.04, FG is 1.012 / 3.05, so ABV is 5.9% to 6.3%.

Notes:

Brewed 12/30/21. Planned for 5.5 gal batch, but pulled extra 17 cups (> 1 gal) of wort to rebuild starters. Gravity was just over 1.04 for 7 gal 11 cups of pre-boil wort. 6 gal 10 cups made it to boil kettle, and 1 lb honey was added. 30 min boil. OG 1.062 / 15.3 BRIX.
