Notes:

Soaked 5 old and small cinnamon sticks in vodka for a few days, then added today to fermenter. Took sample prior to adding. Decent body, caramel notes, and plenty of fruit (only added 1 can of apple thus far. Refractometer read 12.5 BRIX, which converts to 7.69 BRIX / FG 1.031 at this point. Plan is to add second can of apple at transfer to keg, then cold crash and carbonate.

Notes:

Broke up 3 old cinnamon sticks and left in overnight mash. Used what remained of old hop packs (all smelled OK).

Notes:

Overnight mash starting 11/30. Brewed 12/1. Started boil at 6.4 gal. Yield 4.8 gal (maybe 0.2 gal left behind as trub) @ OG 1.085 / BRIX 20.4. Fermented in master bath with floor heat at 75*. Imperial Citrus yeast built up from old starter, and fresh starter only dropped to FG 1.02 per refractometer (didn't convert).
