Mashed in with 4.75 gal 175 F water, but temp readings were weird. Read high initially (160-ish). Added 2 gal. cool water and temp reading dropped to 130s. Not sure I trust the thermometer even though it's brand new. Reheated with ~3 gal boiling water to achieve 154 mash temp. Mash was super thin. Ended up collecting too much water. Pre-boil gravity was 1.030. Aiming for OG 1.047. Need to boil off substantial amount. Going to collect 1 cup wort after 1 hr of boil to test gravity. Only hit OG ...
