Mash Steps

Special Instructions

1.
4 gallons of water sparge temperature 162F
2.
Steep grains for 60 minutes at 152F
3.
Drain, add DME and LME raise wort to boil and add Northern Brewer Pellets at boil, boil time 60 minutes

With 20 minutes remaining add Saaz Hops
5.
With 15 minutes remaining add Whirfloc
6.
Remove and Cool wort to 60F
7.
Pitch lager (2) yeast at 60F and hold for 24 hour so yeast can take hold and then cool Wort to 54F
8.
Day 10 of fermentaion raise to 56F, day 12 58F
9.
At end of fermentation assuming day 14 let rise to 60F for Diacetyl rest and hold for two days
10.
Check that fermantation is complete, it should be close to the FG. Cool to 42F at 2F per day, this should allow more time to complete fermentation. Fermenation should be be complete by the end of the cool down and rack off to secondary.
11.
Crash cool and lager at 35F for four weeks
12.
Bottling adding 3.5oz of priming sugar, store in dark room at 64-72F for 2-3 weeks
