***NEW UPDATED INGREDIENTS BELOW CHANGES*** 8.5 gallons of strike water for no sparge add .5onz coriander seed, (cracked not crushed) at the end of the boil add .5onz of bitter orange peel 15min left in the boil Water chemistry 7.5 grams of Gypsum 2.5 grams of Calcium Chloride 3.5 grams Epsom Salt 12 ml of 88% Lactic Acid (MASH PH should be 5.22 15min into mash) ***Brew 1*** Strike with 8 gallons PH 6.52 (30ml of citric acid) 60 min mash @153*F (stir every 15 min) @ first 15min mash PH 5.33 @99*F 10min mash out @168*F Sparge with 1 gallon PH @6.50 (5ml of citric acid) **Pre-Boil 8.5 gallons** 60min boil @215*F controller set at 80% 15min left in boil 1 whirlfloc tablet *use at 10min left in boil next time* 10min left in boil 1oz of bitter orange peel **Post-Boil 7 gallons** 20min whirlpool of 1oz Galaxy and 1oz Amarillo @ 165-175*F (stick to 165*F next brew session) **6 gallons into fermenter Pitched yeast too hot at 79*F (see if it impacts flavours), temp leveled out at 72*F and is fermenting strong. June 5th, Blow-tie activity has stopped, (15 PSI) begin dry hop. Original Gravity 1.058 (June 03) Final Gravity 1.012 (June 09) ABV 6.04% Tasting/Aroma Notes - Citrus notes on the nose, but not overpowering. Slight bitterness but not much spice but overall balanced.
