Un-American refers to mostly imported ingredients; the core recipe was taken from Gordon Strong's Modern Homebrew Recipes, with local Cluster and Cascade hop additions and dark malt additions to give it a late-winter essence. I don't know if it can be called a 'Baltic Porter', it's a bit hoppy for that, but that is what I am aiming for...

Special Instructions

1.
60 min. Mash with 20 min. rest. 30 min. Sparge, 90 min. Boil.
2.
Sparge over the dark grains in a grain bag (Aromatic/CaraWheat/ChocoWheat/SmokedMalt/Carafa) on a bed of dried Redwood or Spruce branches (Sahti style).
3.
Remove grain bag from Sparge and steep in Boil for first 30 min. to darken wort/utilize dark grains.
4.
0.5 lb. Lactose added to Boil at 15 min. Also, add 8 oz. Belgian Chocolate.
5.
I used Whirlfloc tablet at 15 min. instead of Irish Moss.
6.
Flavor build: add any OR all of the following at 15 min. --> 30 bags Cocoa/Spice tea from Good Earth, 1 Cinammon stick, 1/4 vanilla bean, 6-10 Cardamon seeds, 2 T. dried Grapefruit peel, 2 T. dried Orange peel, 1 T. lemon peel.
7.
YEAST: Windsor British style beer yeast, Saccharomyces cervisiae.
8.
To really darken the beer, add 32 oz. of cold brewed coffee, 48 hrs cold steeped in fridge during bottling stage.
9.
This is a large grain bill; you could re-Mash and grab another small batch from grain bill here.

Notes:

Odd bottling. 1.024 is within range for a FG, doesn't 'taste' done though. Will not use lasctose again - have noticed clumping/cloudiness in last 2 batches which I attribute to lactose, since it is the only new ingredient. Taste is just 'okay' but the viscosity is weird, mouthfeel is 'doughy'. I hope for the best. Have to wonder if this was going to continue to slow ferment - this is day 15 however, and fermentation is done in 4 days, done done in 7 days with the Windsor British yeast.
