Started cleaning garage and all equiptment about 11am. Started heating water for mash to 164 F about 1:45pm-2:40pm. Mashed from 2:45pm-3:50pm. Had 7 gallons of water heated to 168 F for the sparge. Started sparge process at 4 pm and collected 7.6 gallons of wort. Started heating wort at 5 pm to 6:15 pm - got down to 6.2 gallons. Cooled to 70 F - went pretty quick actually. Transferred wort to plastic 6 gal fermenter - lot of foam. I just ran it right into frmenter from boil kettle ...
It went really smooth. Used the bags for the hops and tangerine peel. There was less of a mess and was able to run wort directly into the fermentation vessel - plastic Big Bubbler. Ended up with about 5.7 gallons. I had about 7 gallons of 170 degree water in the sparge vessel just to be sure I had enough - worked great. I added about 12 oz of honey in the last 15 minutes instead of the cane sugar. I also added tangerine peel in a bag for the last 5 minutes of the boil. Plan to condition ...
1-9 pm. Followed recipe pretty close - tried to siphon wort into fermenter (too slow and hard with 1 person) but eventually poured it in with strainer. Had about 7.6 gallons runoff and boiled down to about 6 gallons. I had about 6 gallons in the fermenter. My hydrometer broke so no OG. I am thinking it was a little lowe then 1.052 since I had more volume. Shooting for a 1.013 FG. Plan is to move to secondary July 30 (Mon). Maybe bottle on August 6 which is Monday depends on trip etc. ...
Started at 2:30 pm finished at 9:30 pm. Ended up with less in fermenter then wanted. Should have gotten more from the mash. I also needed to make more sparge - started with 2 gallons at 170 F - should have had about 4 gallons of 170 F sparge. Fermentation started about 24 hours later. Good amount of bubbles. Used dry yeast and just added when I got to 70 F and swirled. Try siphoning next time from boil pot. Maybe put hops in bag. I didn't use a bag but will for dry hopping. Dry hop ...
