Brewed Saturday 3/20/21 Shooting for a 6.5-7% IPA with big white wine notes. Got GMO yeast from Mike - will use mostly that with some Imperial Juice (London Ale III) to round it out. Shoot for 1065ish and trying to create a bunch of unfermentable sugar with high mash temp and lots of Carapils. Mike says the GMO will add about 5% AA, so that would get me up to 78-80% - need to keep that down to keep ABV down and body/sweetness up. Mash at 158-160*.
