Important Note: use pasteurization process from this site: https://byo.com/article/brewing-with-honey/ Basically you build a primary fermentation 'booster' after fermentation has begun (24 hours) around 2 gallons in size - pasteurized water H2O. For this batch I'm making a 3 gallon honey water, then splitting across 2 fermentors. Since I have "way more" than one carboy, I'm going to target making a regular sized batch and then split the honey water across two fermenters. Hazy so no clarifiers used. No protein rest needed as I am using Pilsner extract malts. I did not use British Ale yeast, I used Imperial Yeast #A24 designed for hazy pale ales/NE IPAs and general IPAs

Notes:

The beer is very balanced. The spicy version is also balanced, just has a bit of excitement to it! One of my best, no nonsense efforts, and it is NOT over hopped this time!
