Special Instructions

1.
Fill kettle with 6 gallons H20. Add salts for 7.5 gallons neutral or pale ale style. Bring to boil.
2.
Grind buckwheat. Buckwheat infusion mash - 90 minutes at 163.4 degrees.
3.
Drain grains, top off kettle to 6.5 gallons and bring wort to boil. Boil 50 minutes.
4.
Add bittering hops in hop spider (40 minute boil)
5.
After 25 minutes, add sugar and sorghum syrup, yeast nutrient.
6.
After additional 15 minutes (1 hour total boil), remove from heat. Cool to 170.
7.
Add flameout hops - whirlpool 30 minutes - no heat.
8.
Transfer to fermenter via chiller, cool to 70 and add yeast. After 48 hours, add honey. Finish fermenting. Cold crash and take off yeast.
9.
Transfer finished beer to keg. Carbonate and serve.
